Cold-extracted from hundred-year-old Minuta trees at Oliveto Letizia — bordering the Parco dei Nebrodi, Sicily. The Minuta cultivar is a slow food presidium. The style is influenced by the high-elevation mountain terroir, rare cultivars, and carful early harvesting/processing. An elegant and balanced evoo rather than robust and fiery.

Prima Raccolta is the first pressing of each harvest — cold-extracted at the mill. It is the highest polyphenol expression of the Minuta grove: bright, grassy, with a clean peppery finish — the hallmark of a genuinely high-phenolic oil.

Tasting Notes

Aroma of green olive, tomato leaf, fresh-cut grass, and wild herbs — the mountain terroir in the glass. On the palate: mild to medium green fruitiness, clean bitterness, and a lingering peppery finish that's elegant rather than harsh. Smooth mouthfeel with a bright, alive quality that's the hallmark of high-altitude Nebrodi oil.

Pairings

Best as a finishing oil. Drizzle over grilled fish, seafood crudo, steamed vegetables, fresh cheeses, or warm crusty bread. The elegance of the Minuta suits delicate dishes where a bolder oil would overpower.

High-performance liquid chromatography (HPLC) is the gold standard for measuring polyphenol concentration in extra virgin olive oil. We commissioned independent analysis of the 2026 Prima Raccolta harvest. Results will be published here and linked to each bottle's XRPL provenance record.
