Minuta olive leaf, nepitella, mallow, wild fennel, and rosemary — gathered from the slopes of the Nebrodi Mountains at Oliveto Letizia. Each herb grown or foraged from the estate. Dried slowly, blended by hand, and packed loose leaf in a 100 g tin, foil sealed to preserve freshness. This is a tea shaped by the same landscape as the oil — the same grove, the same altitude, the same unhurried approach.
It is the quietest thing from this grove.

Tasting Notes
Minuta olive leaf opens the cup — clean, slightly bitter, with the quiet depth of a tree that has grown at altitude for centuries. Nepitella follows: a wild Sicilian mint found only in these mountains, cooler and more restrained than common mint. Mallow softens the blend. Wild fennel adds a quiet anise note. Rosemary grounds it. The finish is long and herbal, with a mineral quality that speaks of stone and altitude.

Brewing
Place one heaped teaspoon (2–3 g) in an infuser or teapot. Pour water at 90–95 °C — just off the boil. Steep for 4–5 minutes. No milk. No sweetener needed, though a small measure of raw honey sits well with it.

Minuta olive leaf is the heart of this blend — harvested from the same hundred-year-old trees that give us our extra virgin olive oil, rich in oleuropein, a naturally occurring polyphenol that has been the subject of considerable scientific interest, and naturally caffeine-free. Nepitella is a wild Sicilian mint found only in the mountains — aromatic, cooling, and entirely of this place. Mallow softens the cup and has long been used in the herbal traditions of southern Italy. Wild fennel contributes digestive warmth. Rosemary has long been associated with clarity and circulation. These are ingredients that have grown on this hillside for centuries — nothing added, nothing removed.
