Cold-extracted from hundred-year-old trees at Oliveto Letizia — bordering the Parco dei Nebrodi, Sicily. The grove is planted with Minuta, Verdello, and Biancolilla: three cultivars of exceptional rarity. Minuta is a Slow Food Presidium — recognised as an endangered variety of outstanding cultural and gastronomic value, grown in only a handful of groves in the Nebrodi Mountains. Verdello is equally scarce, a late-ripening cultivar almost entirely absent from commercial production. Prima Raccolta is the first extraction of each harvest, cold-extracted at the mill within six hours of picking and unfiltered but allowed to settle naturally. The oil retains its full polyphenol load, natural sediment, and the alive, grassy intensity that defines genuinely early-harvest EVOO.

Tasting Notes

Aroma of green olive, tomato leaf, fresh-cut grass, and wild herbs — the mountain terroir in the glass. On the palate: mild to medium green fruitiness, clean bitterness, and a lingering peppery finish that's elegant rather than harsh. Smooth mouthfeel with a bright, alive quality that's the hallmark of high-altitude Nebrodi oil.

Pairings

Best as a finishing oil. Drizzle over grilled fish, seafood crudo, steamed vegetables, fresh cheeses, or warm crusty bread. The elegance of the Minuta suits delicate dishes where a bolder oil would overpower.

This is a limited bottling of 500 numbered bottles from the 2026 harvest — the first commercial harvest from Oliveto Letizia. The grove has been in active rejuvenation; 2026 is when it is ready. Each bottle carries its own individual number on a batch card — N° 001/500 through N° 500/500 — and an NFT on the XRP Ledger: scan the QR code to read the harvest record for your exact bottle.

La Torre

Named for the Norman watchtower that has kept watch over this grove for nine centuries. What the tower did for the valley, the ledger now does for the oil — every numbered bottle is verified on the XRP Ledger.
